On Dutch Crunch: as a Bay Area native and semi-pro bread baker, I've been putting the dutch crunch topping on top of my sourdough boule - the ultimate San Francisco bread!
Curious if there are any places in NYC that cook their fries in tallow. I had heard that cooking in tallow is what made McDonald's fries so special (way back when they were special).
I've had Hawksmoor and they were very good. I remember being a bit disappointed because they were "just fries", the description on the menu made us think it was something a bit more. Chalk that up to our reading comprehension I guess? On the other hand the carrots in cider and mustard were amazing.
Thanks for getting the book!
